I’m expecting a big family gathering for Thanksgiving and I find myself already going over the lists of things that will need to be done in advance. My sisters and I will work on the menu together and try to split some of the cooking chores up between our kitchens since that always makes the day much easier. One sister will take care of the vegetable side dishes and the other will take care of making most of the pies. I’ll be cooking the turkey along with a couple of side dishes and another dessert or two. It’s one of my favorite holidays & I always look forward to it. Quick Dinner Ideas with Lentil Pottage

I think I make a pot of lentil pottage about once a week. It just about cooks itself and can then be used in a variety of dishes throughout the week. I like to add some of the pottage to soups and stews. Add a little curry powder to it along with some leftover rice and you have an exotic lentil curry. Add some tomatoes, onions and chili powder for a quick vegetarian chili. I also use the pottage as is as a side dish for almost any kind of meal. (more…)
