It just about cooks itself and can then be used in a variety of dishes throughout the week. I like to add some of the pottage to soups and stews. Add a little curry powder to it along with some leftover rice and you have an exotic lentil curry. Add some tomatoes, onions and chili powder for a quick vegetarian chili. I also use the pottage as is as a side dish for almost any kind of meal.<span id="more-10"></span></p>
<p>This is one of my favorite <a href="//www.hillbillyhousewife.com/beanrecipes.htm“">bean and lentil recipes</a>because it cooks up quickly and is so versatile. Just make a big pot of it on Monday and store it in your fridge for use throughout the week. Thin it out with some chicken broth for a quick and filling lentil soup.
